About Colac Port Adelaide
COLAC is a multi-venue redevelopment of a historic waterfront pub in Port Adelaide that had stood empty for more than 15 years. It reopened in 2025 with Bootleg Social, an all-day dining room with wood-fired pizzas and share plates, Eliots, a set-menu restaurant, and Belles Botanica, a rooftop bar on the second level that opened in September 2025.
The building also houses a whisky distillery and a white spirits distillery making gin and vodka. The state tourism listing notes live jazz, swing and DJs.
